Modern medicine has finally acknowledged what has long been known by the holistic health community: eating meat and eating animal derived foods is injurious to our health. Since ancient times, all major religions have promoted harmlessness. A vegetarian diet is a key component to the practice of harmlessness.
Should we be surprised to find scientific evidence supporting these ancient traditions?
The most common question that I am asked about my decades of vegetarian living is,"Where to you get your protein?

Is it any wonder that grazing animals are healthy, strong and resilient?
Besides the cruelty and the known risk to human health from pathogens in animal foods, and the coronary and renal diseases that result from eating animals, meat eating is indicated in arthritis, immune disorders and degradation of our environment. Factory-farmed animals suffer hideously while they consume unwarranted amounts of produce that would otherwise serve the needs of the world population. Slaughter is a violent and torturous practice akin to genocide. Water pollution from stockyards endangers our aquifers. Greenhouse gasses from livestock-intensive agriculture are the primary cause of global warming and the Covid 19 pandemic is pervasive in these slaughter facilities.
Eating meat threatens our ecosystem, causes suffering, causes human illness and, according to ancient traditions, it erodes our spiritual progress. The announcement by the World Health Organization, affirming that red meat, especially processed meats, are cancer-causing, highlights the well-established relationship between coronary disease and kidney disease, both fatal organ-failures, and meat consumption.
Discontinuing meat eating is compassionate, ethically responsible and personally responsible. Many well-intentioned souls embark on an flesh-free lifestyle but are missing an important principle about health. I can personally relate because of the inadequate information about digestion and nutrition that made my own transition to vegetarianism unnecessarily circuitous. My health was already compromised by poor diet, and there was very little helpful or accurate information about healthful nutrition or about vegetarianism in the late 1970s.
For our diet to be healthful, we must rediscover how to properly care for the body starting with every meal we eat. There is still a great deal of misinformation and over the years, through my educational, health coaching and health publications, I have offered information to expose myths and to provide powerful resources for healthful living.
Often we overlook the obvious!
Vegetarianism is not about quitting meat! It is about eating vegetables, green vegetables!
When we commit to plant-based nutrition we discover that our health, the health of our planet, and the harmonious relations with other species empower us in our spiritual and personal experience of peace and in compassionate harmlessness on our earth planet.
Here's a simply delicious, easy to make vegan soup!
Hearty Vegan Miso Soup
(almost instant!)
In a small bowl, mix 2 TBSP of miso paste (your favorite) into a 1/2 cup of water until smooth enough to pour. Set aside.
In a bowl or saucepan, mix 2 cups of boiling water with 1 TBSP tahini and stir until smooth.
Add :
2 cups of finely cut, washed green vegetables and
1/2 cup chopped root vegetables,
1/2 teaspoon shredded ginger,
2 tbsp. finely chopped wakame seaweed
and Braggs Aminos to taste.
Let stand 5 minutes.
Stir in miso and serve.
Option: Add cooked organic oriental noodles or quinoa.
Let stand covered for 5 minutes, and serve.

Apple Pie
This freshly baked apple pie, was made with home-grown apples and sweetened with maple syrup and dates. Freshly chopped ginger, cinnamon and cardamom were added for spices. A cinnamon stick inserted in the pie crust during baking created a luscious, rich, aromatic flavor.
Organic unbleached flour with coconut oil, instead of butter, make a delicious pie crust.
Compassionate Cuisine can be sugar free, healthful and delicious!
